Our regular week-long programs have been enjoyed by hundreds of students since the school’s inception, and though the seasons change, their purpose remains the same: to bring alive a knowledge of Italy through its food, wine and culture.
Each course has five full-participation cooking classes lasting about four hours and followed by a full lunch with appropriate wines.
Giuliano teaches every class himself and each student learns to make pasta, focacce, etc. under his personal supervision. Techniques are demonstrated first: when its time to work, students can choose the dishes they want to prepare from the day’s varied roster of recipes which include all the elements of Italian food.
Each week includes about 35 recipes and dozens of wines to be tasted. Because the dishes change each week, a student can attend more than one course without repetition.
All programs begin with cocktails and dinner at a noted Tuscan restaurant. Other dinners and trips include both the rustic and the sophisticated. Each week features in-depth tasting of special foods that are unique to Italy, including breads, cheeses and preserved meats from different regions. A final gala dinner is a time for diplomas and good-byes. No two weeks are identical: Giuliano leads the group on all trips and enjoys finding new experiences for our groups.
$5,000.00 for participants in the full program sharing a double room. $4,000.00 for a spouse or friend participating in all activities except cooking lessons. Spouses and friends are invited to join in each day’s lunch at the school. There are a limited number of single rooms available at an additional cost of $1,050.00
